Ingredients
Base
4skinless, boneless chicken thighs
8soft shell corn tortillas
1/2cupPico de Gallo/ salsaapprox 1 tbsp per taco
1/2cupguacamole approx 1 tbsp per taco (can use avocado slices)
1/2cupcotija cheese or any cheese of your choiceapprox 1 tbsp per taco
1/4cupsour creamapprox 1 tsp per taco
Ortega street taco sauce/ hot sauce available approx 1 tsp per taco
2tbspoil
Spice Mix
2tsppaprika
1tbspCajun/ adobo seasoning
1tbspsaltaccording to taste
1tbsppepperaccording to taste

lemon wadgesfor garnish
Instructions
Marinate chicken thighs with oil and spices for at least 30 minutes.
In a pan, add oil and cook the chicken thighs for about 5 minutes on each side At this stage, we are going to cook chicken only partially.
Once the chicken has developed some crust, take it out and cut it into cubes. Add the chicken back into the pan with some taco sauce and cook until it’s fully cooked.
Adjust taco sauce as per your desired spice level and make sure all the pieces are well coated.
In the same pan warm up your tortillas to add that chicken flavor. I like mine a little charred and you are ready to plate it up.
Build your tacos in this order: tacos, chicken cubes, guac, salsa, and cheese.
Garnish with cilantro and serve it with a side of lemon wage, sour cream, and some taco sauce.
