Ingredients
  

Base

  • 1 scoop oats
  • 2 eggs adjust according to your protein intake
  • 1/2 small tomato chopped
  • 1/24 small onion chopped
  • 1/2 jalapeno/ choice of peppers chopped
  • 1 tsp butter
  • chopped cilantro for garnish

Spice Mix

  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tsp salt or according to taste
  • 1 tsp pepper or according to taste

Instructions
 

  • In a bowl, add the oats and the spices and mix them together until well combined.
  • Add the eggs, tomato, and onion to the bowl and mix everything until well incorporated. This should take about a minute or two.
  • Heat up the butter in a pan over medium heat. Once the butter has melted, pour the omelette mixture into the pan and cook for 2-3 minutes on each side, or until the omelette is fully cooked.
  • Top the omelette with some freshly chopped cilantro and serve it with a side of your favorite dip, if desired.

Notes

The oats in this recipe will make the omelette crusty and may cause it to break when flipping, so be careful when cooking. You may need to cook the omelette for a little longer than usual to ensure that it is fully cooked.
