Simple Salad and Air Fried Chicken

Ingredients
  

Base

  • 1 chicken breast boneless, skinless
  • 1/2 head Romaine lettuce can use any greens of your choice
  • 5 cherry tomatoes cut into 4 pieces
  • handful of sliced onions
  • 1 tbsp fetta cheese crumbled
  • 2 tsp lemon juice
  • 1 tbsp mustard

Spice Mix

  • 1 tsp garlic powder
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp seasoning of your choice

Instructions
 

Cooking the chicken

  • Flatten the chicken breast and make shallow cuts in the thicker areas, for even cooking.
  • Apply a thin layer of mustard to the chicken and season both sides with salt, pepper, garlic powder, and your choice of seasoning.
  •  Place the chicken in the air fryer and cook for 12 minutes, flipping halfway through. 
  • Let the chicken rest for 2 to 4 minutes before slicing.

Salad

  • While the chicken is cooking, mix the lettuce, cherry tomatoes, red onion, and feta cheese in a bowl. Season with salt, pepper, and lemon juice and toss to combine.

Serve

  • Now place the chicken and salad, do a taste test, and adjust the seasoning as needed.
