Greek Omelette

Ingredients
  

Base

  • 2 eggs
  • 2 tbsp milk
  • 1/2 cup spinach
  • 4 cherry tomatoes cut in half
  • 1 tbsp black olives
  • 2 tbsp fetta crumbs you can adjust the quantity and replace the cheese according to your preference
  • 1 tbsp oil/ butter

Spice Mix

  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp chopped fresh herbs such as parsley, basil, or oregano

Instructions
 

  • In a small bowl, whisk together the eggs, milk, salt, and pepper.
  • Heat the olive oil in a medium frying pan over medium heat.
  • Sauté spinach and cherry for a minute until shrinks and add the egg mixture to the pan and cook until the bottom is set, about 2-3 minutes.
  • Sprinkle olives, and herbs over the omelette and flip. Cook for another minute or two until the omelette is cooked through.
  • Finish off cooking by sprinkling fetta crumbs on the top generously and serve hot!
