Green Hummus

Green hummus is a delicious and refreshing variation of traditional hummus that adds a pop of fresh herb flavor. The parsley adds a nice green color and a distinct taste to the hummus.

Ingredients
  

  • 1 can chickpeas 400 grams/ 14 ounces
  • 2 garlic cloves
  • 2 tbsp tahini sauce (seasame paste)
  • 1 tbso olive oil
  • 2 tbsp chopped parsley
  • 1 tbsp lemon juice
  • 1 tsp salt

Instructions
 

  • If you are using regular chickpeas then soak them overnight and boil until softened. 
  • Add all the ingredients and blend until desired consistency. If it’s too thick, add water; if it’s too runny, add tahini and a spoonful of chickpeas.
  • Tahini gives it a creamy texture and parsley adds the green color and herby flavor.
  • Garnish with a drizzle of olive oil and serve it with chips and veggies.
