In the same pan, add more oil if needed. Once the pan is hot, add the chopped vegetables, followed by the ginger, garlic, salt, and pepper. Stir constantly and cook for a couple of minutes, until the vegetables are crisp.
Add the cooked paneer back to the pan, along with the soy sauce and paprika. Mix well to coat everything evenly.
Taste and adjust the spices as needed. Garnish with scallions/cilantro and sesame seeds. Serve hot.
