Instructions
In a mixing bowl, combine the ground pork, finely chopped onions and garlic, salt, and pepper. Mix well and form two equal-sized patties.
Heat a skillet over medium-high heat and add a drizzle of olive oil. Once hot, add the sliced onions and cook until caramelized, about 10-15 minutes. Set aside.
In the same skillet, add your patties and cook for 8 to 10 minutes or until fully cooked on medium to high heat. Flip halfway.
While the patties are cooking, toast the brioche buns until golden brown.
In a small mixing bowl, combine the mayonnaise and ketchup to make the sauce.
Assemble the burger by placing a rocket leaves or lettuce leaf on the bottom half of each bun, followed by a slice of tomato.
Place the cooked pork patties on top of the tomato slices and top each patty with a slice of cheddar cheese.
Add a spoonful of caramelized onions on top of the cheese and finish with a generous dollop of the mayo-ketchup sauce.
Top the burgers with the remaining halves of the brioche buns and serve hot.
